What happens before Rosh Hashanah
On Erev Rosh Hashanah, the kitchen does most of the work of the festival. A typical Yom Tov table is built once and eaten across two nights: a cholent started in advance, a fish course, sides, and desserts that keep for a day. Nobody cooks that on the first night of the holiday, and nobody should be expected to.
Families also arrive at different times. Some come for davening and stay for the meal, some come for the meal only, and some come on the second night. A staff crew that knows the pattern will not rush the table because a late arrival has not eaten yet, and it will not clear a table that people are still coming back to.
Shomer Shabbos staffing for a Yom Tov table
This is the part that decides whether an outside crew can work a Yom Tov event at all. The cooking is done before the festival, the kitchen is finished when the festival begins, and the service happens once it is over. No crew lights a fire during the holiday, and no one is driving around on it.
Our crews are Shomer Shabbos, so they arrive before the festival, help with the preparation, and are in position for the meal when it is served. If your event continues into the second night, the same arrangement applies: the setup happens before, the service happens after. It is a rhythm our crews know well, and it is the reason we can staff a Yom Tov table at all.
- Kitchen help for the Erev Rosh Hashanah cooking and the kashering
- Waiters for the table, briefed on the menu and the seating
- Bartenders for a drinks service across both nights
- A mashgiach on request, coordinated with KCL
How far ahead to book
Six to eight weeks is the target for Rosh Hashanah, and we would go earlier for a family hosting a large table or needing a mashgiach. The crews who are experienced with Yom Tov kitchen practice are the first to be booked, and in a community this size that happens well before the festival itself.
There is a practical reason to book early that has nothing to do with the crew: the date is often fixed by family availability and by the hall, and the two together leave very little room. If your date is already fixed, tell us now and we will tell you honestly whether we can cover it.
Working with your caterer
Most families have a caterer they trust for the Yom Tov table, often one they have used for years. We work with that caterer rather than around it. We confirm the menu and the service style with them before the event, brief our crew on it, and take responsibility for the dining room.
If you would rather cook the Yom Tov table yourselves, our kitchen help can do the shopping, the prep and the cooking alongside you, and our waiters can take the table. Either arrangement works; what matters is that you are not doing both at once.
What to tell us
The dates, the venue, the number of guests, whether you want the preparation covered and whether you have a caterer. With that we can come back with a crew, a schedule for the preparation day and the evening, and a quote itemised by role and by hour.
If the event is in Lakewood, Brick, Toms River, Jackson or Howell, we cover it with the same crews and the same standard. Outside that radius, ask us anyway and we will tell you where the line sits.
